Not eating out has gotten easier since Nick's diet became so limited, but I have a confession: half of the time, we eat separate dinners because we're both just too tired/lazy to deal with it. Like, Nick will want to have pesto (which I hate), so he will have that and I'll have cereal. Or I will act like a pain in the rump and refuse to name anything that sounds good, so Nick will go whip himself something up, and eat without me. I'm not proud of this, but it happens.
So, we're going to knock that off. Eat together like grown ups who love each other.
We started with a gigantic grocery shopping trip. Then came the list.
Don't laugh. I'm still pretty new at this whole planning thing (thus the ellipses).
It can be really tough to come up with 100% gluten free meals for 7 days in a row (which is kind of why Nick eats so much freaking pesto, because there seems to be nothing else).
Without further rambles, our weekly menu:
Monday: Sweet onion chicken burgers, roasted potatoes, and peas. We got the burgers at Costco. They're full of Gouda. I was expecting them to be sweeter, but they're pretty savory.
Tuesday: Pizza casserole. This is Nick's favorite food that I make, and I made it gluten free by using special pasta that is made from brown rice.
Wednesday: Ham Steak, apparently. I have no idea what to serve with ham. Ideas?
Thursday: Roast. This one is sort of up in the air. It will really depend on how much left overs we have from the rest of the week. We may end up eating left over pizza casserole and making the roast next week.
Friday: Gluten free pancakes, eggs, and bacon. We got some really tasty gluten free pancake mix, and we love to eat breakfast for dinner. Or lunch. Or anytime really.
Saturday: Split pea soup. We're going to use some of the ham from Wednesday in this. We're also going to remember to wash the split peas really well before cooking, unlike last time.
Sunday: BBQ trip tip. Nick got a new gas grill for Christmas, so of course we need to have some steak. The trip tip is in a pre-made marinade of wine and garlic. We've never had it before, so hopefully it's not gross.

We stopped eating out as much for financial reasons and it was pretty hard at first but has gotten easier :) you can do it.
I think the menu is great. My grandma makes ham steak with mashed pot and veggies. Very simple but I don't know much about gluten.
Pizza casserole does sound pretty good.
Woohoo, I totally love that you made a meal plan! You know how much I love a good meal plan.
I'd do the ham steak with scalloped potatoes and peas. Or if you don't like peas, maybe asparagus -- that goes really well with ham. I know there are some veggies you don't like, but I can't remember which ones (all of them? ha!).
